There are several types of processing clients for the slaughterhouse, both internal and external (e.g., wholesalers for carcasses and cuts; bacon for UK retail). The slaughterhouse has a fairly stable market with many long-term clients. Nevertheless, it is an open market. Law (EU protocols and country-specific protocols) and processors push quality requirements on to the slaughterhouse.

Distribution concept determines type of relationship and amount of information to be exchanged.

Country-specific protocols need to be defined for each country outside the EU in alignment with WTO and bi-lateral agreements.
