Slaughterhouse/Processor

From January 1, 2008, slaughterhouses have to collect information on so-called food chain information (VKI). Based on this information decisions have to be taken at slaughtering with respect to measures to assure food safety. This information needs to be supplied by farmers 24 hours in advance. Availability of such data is incorporated in IKB. Information should be available in IKB databases to reduce delaying paperwork. In the workbook Hygiene Code for pig slaughterhouses, the procedure for satisfying VKI has recently been added.
The slaughterhouse manages relationships with its suppliers. The company produces an electronic newsletter and a supplier magazine. It also has a supplier council and organizes communication with suppliers, formally through, e.g., the slaughterhouse dashboard, and informally, e.g., through supplier days or excursions to the slaughterhouse. VION  also has organized a study tour to Italy for a selected group of producers.
FarmingNet has led to quality improvement. This improvement can be observed in an increase of 1.5 Eurocent per kilogram slaughter weight, paid to farmers.

Carcass information is used: (1), as the basis for the pay-out system to farmers; (2), to select meat product for particular markets.
Product characteristics are used to monitor and benchmark the different plants.

VKI-information (see section on quality management and information exchange) is used to support health and quality management.
Process results are used to monitor and benchmark the different plants.
